CREATIVE COOKING CREAMY GOLDEN WALDORF
Makes 6 to 8 servings
6 oz package lemon jell-o
¼ tsp salt
2/3 C hot water
Lemon juice
3 medium Golden Delicious apples
½ C mayonnaise
1 C heavy cream, whipped
1 C celery, chopped fine
1 C walnuts or pecans, chopped fine
Salad greens
Dissolve gelatin and salt in hot water in a bowl, stir in 2 Tbsp lemon juice, and chill until thickened. Pare 2 apples partially, then core and dice. "The skin will add color to the salad." Core and cut remaining apple into thin slices. Sprinkle diced and sliced apples with lemon juice to prevent discoloration. Arrange apple slices, skin sides down around bottom of an 8 C mold. Blend mayonnaise into thickened gelatin and fold in whipped cream. Fold in diced apples, celery, and nuts gently, then spoon mixture carefully over sliced apples. Chill Until firm. Unmold onto serving platter and garnish with salad greens.
