Cucumber With Yogurt Sauce
Refreshing and delicious, this sauce is as versatile as it is easy to make. Serve it as a dip with sliced pita and veggies at a fun family BBQ or on top of a beautiful piece of salmon at your next summer soirée.
Ingredients
Preparation time: 12 minutes
1 medium cucumber
2 cups plain, fat-free yogurt
2 cloves garlic, minced
1/4 teaspoon black pepper
2 tablespoons plus 1 tablespoon fresh mint, finely chopped
2 tablespoons fresh parsley, finely chopped
Directions
Yield: 3 cups
Serving size: 1/2 cup
1 - Peel and dice the cucumber and place on paper towels to allow excess liquid to be absorbed. In a small bowl, mix yogurt, garlic, black pepper, 2 tablespoons of the mint, and parsley. Fold in diced cucumbers. Chill until serving time. Just before serving, sprinkle with 1 tablespoon chopped mint for garnish. Serve with pita triangles.
