More Summer Jell-O Salads!
CARROT PINEAPPLE SALAD II
1 C raw carrots, peeled, grated
1 C crushed pineapple, drained
1 C pineapple juice (can use juice drained from crushed pineapple, above)
¼ C chopped nuts
1 package lemon jell-o
1 C hot water
6 or 8 cherries, sliced
Crisp greens (for serving)
Mayonnaise (for garnish, and preferably homemade—see recipes in Basics section)
Dissolve jell-o in hot water, add juice, and chill until slightly thickened. Add carrots, crushed pineapple, nuts, and cherries, turn into desired mold, and chill until firm. Serve on crisp greens, garnished with mayonnaise.
