Skyline chili is very popular around Cincinnati. It is an institution! It's almost as common as McDonalds. I did my updates: I gave it a little more zing with more chili powder and a little more savory by boosting the cocoa quantity. Top with onions and some cheese, and it will warm you right up. Serve on a hotdog or over some spaghetti if you're in Cincinnati. I hope you like it.

2 pounds ground beef
2 cups onion, diced finely.
4 cups beef stock
16 ounces tomato sauce
2 tablespoons chili powder
2 tablespoons apple cider vinegar
1 tablespoon Worcestershire sauce
3 tablespoons cocoa powder
1 tablespoon garlic, minced
1 teaspoon ground cumin
1 teaspoon cinnamon
1/4 teaspoon cloves
1/4 teaspoon allspice
1/2 teaspoon salt
1/2 teaspoon cayenne pepper

Honey and salt - maybe, after you taste

Cheddar cheese and onions to top.

In a soup pot on medium heat, add ground beef and brown.

Add onion and cook for 4 minutes stirring occasionally.

Add spices and cook for 3 minutes (you ahould smell the clove and allspice).

Add tomato sauce, Worcestershire, and vinegar and stir.

Add beef stock and simmer for 1 hour on medium low. Taste for seasoning. Now you can add any salt you may need or honey if the chili is too spicy.

Serving Possibilities:
3 way - Serve with cheese and onions.
4 way - Serve with cheese, onions and cooked kidney beans.
5 way - Serve with cheese, onions and cooked kidney beans on top of spaghetti.
