I posted the backstory of the cookbook, and its author, for yesterday's recipes. Spoiler– both were from women who lived in Florida trailer parks back in the '50s! Fun stuff.
Served with MRS. HAVDU'S HUNGARIAN MEAT BALLS.
Note: I wanted scalloped potatoes, so omitted the cheese. Also cut the butter down to 3 Tbsps.
SELMA'S SCALLOPED POTATOES
Yield: 4 to 6 portions
6 medium potatoes, pared, sliced thin
6 Tbsp butter
Salt, pepper, to taste
Flour
12 slices Cheddar cheese
2 C milk
Preheat oven to 350o. Place one-third of potato slices in bottom of a lightly greased 2-quart casserole, dot with one-third of the butter, season with salt and pepper, dust with flour, and cover with 4 cheese slices Repeat layering twice, adding milk before topping with last 4 cheese slices. Bake 1 hour.
