Twice Cooked Pork

Ingredients

300 g pork shoulder
1 green pepper
1 garlic leek
2 slices ginger
Sauce
1 tbsp hot soy bean paste
1/2 tbsp each soy sauce, sweet soy bean paste, cooking wine
1 tsp sugar
Method
- Wash pork, put in a pot and add water. Bring to a boil. Turn down heat to simmer for 30 minutes. Remove and drain.
- Cut pork into thin slices when cooled.
- Cut green pepper to triangular pieces and garlic leek to slanting sections, separating the white and green parts.
- Mix sauce ingredients in a small bowl.
- Heat 2 tbsp oil in a wok. Add pork and stir-fry pork briefly. Add garlic leek white parts and green pepper. Stir-fry until pork is nearly cooked. Remove.
- Heat 2 tbsp oil to wok. Add ginger and stir-fried briefly. Add sauce ingredients and stir-fry until fragrant. Return pork, pepper, garlic whites to wok. Stir-fry to combine. Before removing from the wok, mix in garlic leek green parts. Serve hot.
