Penne with the 7 Sins, or Penne of the Seven Ps, is a delicious, creamy and tasty dish of Tuscan origin.
Easy to prepare, they owe their name to the fact that there are seven ingredients needed to make it and they all start with "P".
Ingredients
• 500g/1lb penne
• 80g/half cup pancetta
• 1 leek finely chopped
• 100g/1/2 cup peas
• 250g/2 cups passata
• 200ml/1 cup double/heavy cream
• Fresh parsley finely chopped
• Parmesan cheese
• Salt & pepper
• peperoncino chilli flakes
• Extra virgin olive oil
Method
In a large sauce pan add the pancetta and fry until golden and crisp. Add the leek, chilli flakes and cook for a few minutes, then add the peas.
Add the passata, season and simmer for 15 minutes.
Add the pasta to a pan of boiling salted water and cook until al dente.
Add the cream, cheese and parsley to the sauce and mix well.
Add the pasta to the sauce and toss together.
Finish with extra cheese and buon appetito…
