
 Ingredients
 
 2 egg yolks
 5 tbsp caster sugar
 finely grated rind and juice of 2 limes
 4 tbsp white wine or apple juice
 3 tbsp single cream
 2-1/4 cups chocolate chip or dark chocolate ice cream
 pared strips of lime rind, to decorate
 Method
  - Put the egg yolks and sugar in a heatproof bowl and beat until combined. Beat in the lime rind and juice, then the white wine or apple juice. 
- Whisk the mixture over a pan of gently simmering water until the sabayon is smooth and thick, and the mixture leaves a trail when the whisk is lifted from the bowl. 
- Lightly whisk in the cream. Remove the bowl from the pan and cover with a lid or plate. 
- Working quickly, scoop the ice cream into four glasses. Spoon the sabayon sauce over the ice cream, decorate with the strips of lime rind and serve immediately.
