Aar Macher Jhol (Spicy Long Whiskered Catfish Curry)
Ingredients:
Aar Maach – 4 (Big pieces)
Ginger Paste – 1 tsp
Garlic Paste – 1 ½ tsp
Tomato – 2 (Paste)
Potato – 1 Big (Cut into long wedges)
Coriander Powder – ½ tsp
Cumin Powder – ½ tsp
Garam Masala Powder – ½ tsp
Turmeric Powder – 1 tsp
Red Chilli Powder – ½ tsp
Kashmiri Red Chilli Powder – ½ tsp
Green Chilli – 2
Bay Leaf – 2
Cumin Seeds – ½ tsp
Salt – To taste
Sugar – ½ tsp
Mustard Oil – 4-5 Tbsp
Steps:
Clean the fish pieces. Sprinkle ½ tsp turmeric powder and salt on the fish pieces. Coat them well and leave for 15-20 minutes.
Meanwhile grind ginger, garlic and tomato separately.
Heat 4 Tbsp oil in a kadai. Lightly fry the fish pieces. Take out from kadai and keep aside.
In the same kadai add 1 tbsp more oil. Lightly sauté the potato wedges. Take out from kadai and keep aside.
Add cumin seeds and bay leaf. Fry till you get nutty aroma from cumin seeds.
Now add ginger and garlic paste. Cook till oil releases. Next add tomato paste. Cook till oil separates.
Add all powder masalas, except garam masala powder.
Next, add fried potatos and salt. Add 1 cup warm water. Mix everything together.
When water starts to boil add fried fish pieces. Cover and cook for a while on medium-low heat.
Remove cover and add garam masala powder. Remove from fire. Cover and rest for 10 minutes. Serve hot with steamed rice only.
