Summer Jell-O Salad recipes
LIME GRAPE GELATIN MOLDS WITH DRESSING
Yield: 4 servings
3-oz package lime jell-o, prepared according to package directions substituting ¼ C lime juice, preferably freshly squeezed, for an equal part of the cold water, chilled until partially set
1 C small seedless grape
Lettuce, parsley, or watercress
Dressing
When jell-o is partially set, fold in grapes and pour mixture evenly into 4 individual molds. Chill until set. Unmold on greens and serve with Dressing.
DRESSING
2½ Tbsp mayonnaise
1/3 C sour cream
Salt, sugar, to taste
A few sliced fresh strawberries or drained frozen ones (optional)
Blend together mayonnaise, sour cream, and salt and sugar. "A few sliced fresh strawberries (or drained frozen ones) may be added for color."
