Ingredients
- Quesadilla Filling:
- Chicken Mince 250 gm
- Oil 2 tbsp
- Ginger garlic paste 1/2 tsp
- Onion 1 small fine chopped (2 tbsp heaped)
- Paprika powder 1/2 tsp
- Salt 1/2 tsp
- Red chilli flakes 1/2 tsp
- Red chilli powder 1/4 tsp
- Green chillies chopped 1 tsp (2 chillies)
- Tomatoes 1 + 1/2 tbsp fine chopped
- Capsicum 1 + 1/2 tbsp fine chopped
- Yellow bell pepper 1 + 1/2 tbsp fine chopped
- Chilli garlic ketchup 1 tbsp
- Tortilla wraps -4 pieces (makes 2)
- Pizza cheese grated 1 cup
Method
To cook filling / mince:
Take oil in a pot, add ginger garlic paste and try. Add onion and cook until translucent (takes 5 min approx). Add chicken mince and cook until its water evaporates.
Add seasonings; paprika powder, salt, red chilli flakes, red chilli powder.
Saute. Add green chillies chopped. Add tomatoes, capsicum and yellow bell pepper.
You can also add mushrooms, olives, tikka seasoning etc. according to your taste.
Cook but keep the veggies crunchy. Add chilli garlic ketchup. Mix. Your filling is ready.
To Assemble:
Toast tortilla wraps slightly for 1 minute on both sides. Use just a drop of oil.
Take a tortilla wrap, spread sour cream over it. Use thin layer on both wraps. Spread grated pizza cheese over the wrap. Spread the mince on the tortilla wrap. Spread pizza cheese again. Cover with the second wrap.
Bake for 15 mins on low heat, brush with butter. Or toast on a non-stick pan on both sides on low flame. Use just a drop of oil.
Serve with salsa and sour cream.
