Georgia Peach Salad - Mixed greens are tossed with grilled chicken, fresh Georgia peaches, pecans, goat cheese crumbles, grape tomatoes, and sliced red onions. Serve with my homemade white balsamic vinaigrette.
Peaches are FINALLY in season! They are my favorite fruit and, sadly, I can only enjoy them about 4 months of the year MAX. Even living in Georgia, I can only access them during their peak season which is June - September. But once they're available, you can find me adding them to all sorts of treats, both sweet and savory.
Today's recipe is for this Georgia Peach Salad. While peaches are the highlight, I also added another Georgia export - pecans. I love a good toasted pecan. They are crunchy but also slightly tender. And their natural sweetness is unmatched.
To dress this salad, I decided to use the more mild white balsamic vinegar. It's also got a little sweetness without being as strong as the aged balsamic vinegar. It's a super simple vinaigrette to make at home so give it a try!
