Here’s to spring!

And the return of sunshine and longer days, and the countdown to the publication of my new cookbook, Tandoori Home Cooking.

The book is packed with classic tandoori recipes alongside flatbreads, salads, chutneys and pickles. These recipes can be served all year round from your home kitchen with my tips and hacks on how to make the most of the flavours from a traditional tandoor.

To celebrate the cookbook launch, there is an exciting competition with Waterstones. I look forward to hosting a cook-a-long for the winner!

I am also thrilled to be doing a small UK book tour and some in-person events, chatting about the inspiration behind the book and signing copies at venues across cities. I would love to see you at Toppings in St. Andrews in May. I'll also be in Edinburgh the same month and then Bath in June. More details can be found here.

You can also find me cooking at the Feasts in the Walled Garden event in Wales, cooking recipes from Tandoori Home Cooking over an open fire for a large group of diners. The menu is delicious, reflecting regions of India, with a variety of dishes including vegetarian options, kebabs, chaat, salads and drinks. Find out more and book your tickets.

Thank you to those of you who have pre-ordered the cookbook. It's amazing to see how much everyone is looking forward to it. So today I'm sharing a recipe from Tandoori Home Cooking. Spiced Aubergine Tikka, also known as Baingan Sarson ka Tikka, is marinated in mustard, chilli and turmeric. The recipe uses a double marinade technique, as explained in the book, and is great for vegetables and meat. Hope you all enjoy it!

Tandoori chicken:  Marinate in yoghurt, garlic, ginger, lemon juice, tomato puree, cumin, chilli powder, cream, gm, salt & oil. Roast chicken at 180c until its ready
