You may not be aware, but Mexican cuisine shares some serious similarities with Indian cuisine — a love of legumes, lots of bold flavors, tons of toppings, and plenty of flatbreads (like soft tortillas and crunchy, fried tostadas). We even use a lot of the same spices like cumin, coriander, & chile peppers.
So, while this recipe for Vegetarian Tacos might seem exotic, chances are you already have *most* of what you need on hand! Better yet, this deliciously simple meal comes together in just 30 minutes, so it's perfect for a busy weeknight.
At our house, we offer crunchy corn tortilla shells filled with zesty mashed kidney beans, bright & spicy salsa, creamy & cooling sour cream, and plenty of melty cheese. Since tacos are all about the toppings, feel free to let everyone assemble their own perfect plate!
