Today I made a very tasty, warm quinoa salad. Salads are always a great meal idea and just because summer is over doesn't mean you have to wait until next year to make one. This salad is warm and perfect for the autumnal season, a lovely mixture of ingredients with nutritional benefits.
The ingredients are a rough estimate and a guide for a portion of one. I've added in some beef pastrami as I had some leftover but you could always leave it out for a vegetarian meal. I also like soaking the grains beforehand as it reduces cooking time and makes it easier for the body to absorb.
Ingredients
Handful of quinoa
Handful of red lentils
1/2 tsp tomato ketchup
Vegetable stock
Dash of turmeric
Handful of cauliflower, cut into small pieces
Small bunch of kale
3 slices beef pastrami, cut up
2 table spoons of water
1/2 tsp oil
Sprinkle of salt, pepper and garlic powder
1 tsp sunflower seeds
1 tsp pumpkin seeds
1 tsp sesame seeds
Method
Put the quinoa, lentils, tomato ketchup and enough vegetables stock into a pan and cook on a gentle simmer until all the water has been absorbed and the lentils and quinoa are fully cooked.
In the meantime add the cauliflower, kale, beef, water, oil, salt, pepper and garlic powder to a pan and leave to cook on a low heat.
Toast the seeds in a dry pan and set aside.
Once everything is cooked, mix together and serve!
