Carrot Halwa or Gajar ka Halwa is Bollywood's favorite dessert! It's a decadent carrot pudding that's always made during the festive season.
I have all versions of making carrot halwa on the blog. The microwave version can be found in Carrot Halwa Pistachio Baklava post and the stovetop version can be found in Carrot Halwa Ice Cream post.
Since both these versions are not vegan, I wanted to give you an option for that as well. This time, I have made vegan carrot halwa in the Instant Pot!
