'Methi' (Fenugreek Leaf) and 'Matar' (Green Peas) are staple are staple during winter in every house. I love both 'matar' and 'methi' and when it combines with 'mushroom' in silky white gravy… it is just heaven! Unlike my other recipes, it is also a very easy recipe to prepare and can be served with almost every Indian flat bread. You can prepare on a special lunch or dinner or when there are guest in your house. Try this recipe before 'matar' and 'methi' disappears from market.

Ingredients:

  • Button Mushroom – 200 gms
  • Oil – 1 Tbsp
  • Ghee / Butter – 3-4 tsp
  • Bay Leaf – 2 nos
  • Cinnamon – 1"
  • Whole Black Pepper Corn – 8-10 nos
  • Clove – 3-4 nos
  • Black Cardamom – 1 no
  • Shahi Jeera – ¼ tsp
  • Coriander Powder – 1 tsp
  • Green Peas – ¾ cup (Blanched)
  • Fresh Chopped Fenugreek Leaf – ½ cup
  • Milk – ½ cup
  • Malai / Fresh Cream – ¼ cup
  • Sugar – ½ tsp
  • Yogurt – 2 Tbsp
  • Cashew – 8-10 nos
  • Onion – 2 nos
  • Ginger – 1"
  • Green Chilli – 3-4 (As per taste)
  • White Pepper Corn – 1 tsp
  • Salt – To taste

Steps:

  1. Blanch green peas. Drain out water and keep aside. Wash fresh fenugreek leaf and finely chop. Wash and slice the mushroom.
  2. In a separate blanch onion, ginger, green chilli and cashew. Let it cool down completely. Now grind into smooth paste adding 1 tsp white pepper corn.
  3. In a pan add 1 Tbsp oil and 1 tsp ghee. Temper it with whole spices. Now add the ground paste, coriander powder and ½ tsp salt. Cook on low flame.
  4. In another pan heat 2 tsp ghee. Add sliced mushroom. Sprinkle a fat pinch of salt. When mushroom is almost done add chopped fenugreek leaf and cook on low fire till aromatic.
  5. Add whisked yogurt in the pan where we are cooking the gravy. When oil starts to appear on sides of the pan add the sautéed mushroom-fenugreek.
  6. Mix everything well. Add blanched green peas.
  7. Add milk as per your requirement of consistency of gravy. Cook for medium-low heat.
  8. Next add fresh cream and sugar. Mix everything well.
  9. Serve hot with roti / paratha / rumali roti / butter naan.
