In a medium bowl, melt

the butter and set aside.

In another medium bowl, whisk

together the dry ingredients.

Add the milk, egg and vanilla to

the butter and whisk to combine.

Add the dry ingredients

to the wet ingredients.

Whisk just until combined.

Heat a nonstick skillet over medium

heat with no oil. Once hot add about

1/2 cup of pancake batter for large

pancakes, less for smaller.

Cook until you see bubbles

and the edge loses its shine.

Flip the pancake over and

cook until golden brown.

  • 3 Tbsp. butter
  • 1½ cups all-purpose flour
  • 3½ tsp. baking powder
  • 1 tsp. salt
  • 1 Tbsp. sugar
  • 1¼ cups milk
  • 1 egg. slightly beaten
  • 1 tsp. vanilla extract

  1. In a medium bowl melt the butter and set aside.
  2. In another medium bowl, whisk together the dry ingredients.
  3. Add the milk, egg and vanilla to the butter and whisk to combine.
  4. Add the dry ingredients to the wet ingredients, whisking just until combined, creamy and no large lumps remain.
  5. Heat a large nonstick skillet over medium heat without any oil. Once the skillet is hot, add about 1/2 cup of batter for large pancakes or less for smaller ones.
  6. Cook until you see bubbles on top and the edge loses it shine. Flip the pancake over and cook until golden brown. Serve with your favorite topping.
