Oven baked fries? This one really works! Just like the double fry method, these are double baked.
Make sure you thoroughly wash the fries until the water runs clear. Then thoroughly dry them between 2 kitchen towels. Let them sit for at least 2 hours after the first bake At 250. Then finish "frying" at 425. Ideally, cook them in a convection oven or air fryer for the best results.
INGREDIENTS:
2 russet potatos, scrubbed clean, skin on
Canola oil
2 tsp sea salt
1 tsp black pepper
1 tsp garlic powder
1 tsp paprika
1/4 tsp cayenne
DIRECTIONS:
Place all the ingredients in a small shaker or small bowl.
Scrub the potatoes with a clean scrub pad. Slice them into 3/8 inch fries. Place in a mixing bowl and cover with cold water. Let side for 20 minutes then swish them around and drain off the starchy water. Repeat the washing. Drain.
Preheat a cnvection oven or airfryer to 250 degrees. Place the fries between 2 clean kitchen towels and dry them throughly. Place in a large mixing bowl then coat with canola oil. Then season with the seasoning mix on all sides.
Remove the fries to a wire rack over a sheet pan. Spread them out so they are not touching. Place in the oven and cook for 19 minutes. Remove from oven and let sit on the counter for at least 2 hours or up to overnight in the fridge.
When ready to serve, preheat the oven to 425 degrees. If store in the fridge, remove them from the fridge at least 1 hour before cooking. Place the fries in the oven and cook for 20 minutes until golden brown. Serve immediately.
