You have what's left of your turkey, not enough for a full meal but too much to just throw away. Let's make soup. Really tasty soup, just like Grandma made.

1 leftover turkey (most of the meat removed)
1 onion, diced
3 carrots, diced
3 celery stalks, diced
3 cloves garlic, minced
8 cups water
1 teaspoon pepper
2 bay leaves
2 springs thyme
1 bag frozen mixed vegetables
Noodles:
1 cup flour
1/4 teaspoon salt
2 large eggs

Oil for cooking

In a soup kettle on medium heat, add oil.

Add carrots, celery, and onions; cook for 10 minutes stirring often.

Add garlic, thyme, and bay leaf.

Add turkey and water.

Add salt and pepper.

Reduce to a simmer.

Cook for two hours.

After one hour of cooking, make noodles.

Mix flour, eggs, salt, and water.

Kneed for 10 minutes until dough becomes elastic.

Refrigerate for 20 minutes.

Roll out dough thin, thin, thiner so you can cut into noodles.

Coat with a light dusting of flour and let rest for 20 minutes.

Strain soup and remove bones and vegetables.

Heat a pot of water to boiling and add noodles and cook for 6 minutes and remove to finish in the soup.

After soup has simmered for 2 hours, add frozen vegetables and cook for 15 minutes.

Add noodles and bring to a boil; boil until noodles are tender, about 8 minutes.

Serve.
