Lawson's Black Cockatoo Bakery is famous with our friends who've raved about it for ages. We're not up in the Blue Mountains often, but made a plan to visit this time. We visited their Katoomba outlet, found halfway down the main strip of shops.

The bakery uses organic flour, naturally leavened and slow fermented. It is made using stoneground flour. The bread has great depth of flavour and our chosen option, the emmer bread was absolutely divine with a soft fluffy inside and crunchy exterior.

They have a glass cabinet showcasing their pastries, both a sweet and savoury selection, made with with cultured butter. On our day of visit there were pastel de Nata, salted caramel tarts, canele, almond croissants and more. There's also some vegan options.

We try the cinnamon croissant, which was absolutely delicious, probably the best we've had. We also try their fluffy foccacia and palmier.

They also sell coffee, made using Single O beans.

Definitely worth a visit but be sure to arrive early as it's very popular.
