Ingredients:

2 cups Mixed Greens

1 cup Kale, chopped

1 Apple, thinly sliced

1/3 cup Pecans, coarsely chopped

1/4 cup Pomegranate arils

1/4 cup Dried Cranberries

Handful of Feta Cheese

For the Dressing:

3 tbsp Balsamic Vinegar

5 tbsp Olive Oil

2-3 tsp Maple Syrup

Salt and Pepper to taste

Directions:

  1. Combine ingredients for dressing and set aside.
  2. Plate the salad greens in a serving bowl.
  3. Add apples, pecans, pomegranates and cranberries.
  4. Sprinkle with feta cheese and drizzle dressing over salad.
