Lai Fun (濑粉) are thick rice noodles are also known as Laksa noodles in Malaysia. Made from rice flour and potato starch - it has a slightly chewy soft texture. By far, the most popular version of this Noodle is served in a bowl of hot flavorsome broth of Asam/Curry Laksa. The version presented here is less popular (infact, U can hardly find at most eatery) - simple stir-fried, which is very much less complicated in preparation. Noodle – A bunch of good quality LaiFun.

Protein – Sliced Chicken or any meat/seafood U fancy.

Side Condiments – A large handful of Beansprouts. Sliced Onion, Red Chili and Scallion (cut to about 2-inches long). Some finely chopped Garlic. One oo two Eggs.

Seasoning– Sugar, Salt, Light/Dark soy, a dash of White Pepper, Oyster sauce and Sesame oil, All to taste,

** Note : Just a dash/pinch of everything, if U prefer a stronger intensity of an ingredient/spice flavor, simply add a little extra of that ingredient/spice - no rocket scientific measurement here. Always taste your Seasoning !!! The trick is NOT the exact measurement, the trick is "to taste the Seasoning" and get ur preference balance of flavors !!!

Preparing the Proteins and Eggs

• Start by heating up some oil on medium/low heat and saute the Garlic, Onion and Chicken till aromatic.

• Push everything aside, add a little more oil and crack the Eggs directly into the Wok, Breakup the Eggs a little and swirl the Wok to create an even layer of Eggs. Breakup the Eggs into bite-size and mix everything together and saute till aromatic.

Preparing the Noodles

• Next add the Noodles and all the Seasoning Ingredient, crank up the heat and quickly stir-fry and mix everything thoroughly till aromatic.

• Next add the Beansprouts and Scallion and give a few more good stirs, just to incorporate everything and U are done.

Serving

• Plate, garnish and viola, ur full of 'Wok-Hei' dry springy plate of delight "Stir-Fried LaiFun (Laksa Noodles)" is ready to be served HOT.
