Brinjal, a bright purple spongy, absorbent fruit is often used in many cuisines as vegetables. This recipe calls for Chinese Eggplant which is much smaller and elongated in shape with thinner skin. Also milder in flavor because it contains far less seeds (which is the causes of slight bitterness). It is simple, quick, clean and wonderfully delicious flavorful. Brinjal – 2 medium-size – about 6-inches long Chinese Brinjals.

Protein – Sliced Chicken or any meat/seafood U fancy.

Toppings Condiments – A big handful of soaked roughly chopped Dried-shrimps,. Red Chili. finely chopped Garlic/Ginger and Scallion.

Sauce – Light soy, Sugar, Sesame oil, White pepper, a touch of Oyster sauce and Shaoxing wine.
While U can simply use normal Light Soy but it tends to be too salty with no flavors at all. So, prepare ur own sauce mixture by mixing all the ingredients together, making sure everything is dissolved. All to taste.
Optional - if U want a little tanginess and spiciness, U can add a drizzle of Chili OIl and a squeeze of Lime/Lemon.- ** Note : Just a dash/pinch of everything, if U prefer a stronger intensity of an ingredient/spice flavor, simply add a little extra of that ingredient/spice - no rocket scientific measurement here. Always taste your Seasoning !!! The trick is NOT the exact measurement, the trick is "to taste the Seasoning" and get ur preference balance of flavors !!!

Preparing the Brinjal- • Remove the stems, cut the Brinjals into Triangular of 2-inches in length, with skin. Soak them in salted water to avoid oxidation.
- • Get a pot of water rolling boil. When U are ready to steam, drain the Brinjal and pat-dry. Steam the Brinjals for about 08-10-mins until the flesh feels soft and saturated with moisture.
- • Meanwhile, mixed all the Sauce Ingredients thoroughly. Set aside.
- • Get a considerable amount of oil till smoking hot. Pour over the Toppings Condiments and give it a mix. Set aside.
- • By now, the Brinjals should be ready and steamed properly. Remove from steamer. Thoroughly drain/discard excess water.
