Ingredients
2 tsp chopped garlic
1 tbsp grated ginger
1 tbsp lemon juice
1 tbsp garam masala or curry paste
2 tbsp vegetable oil
1/4 cup yogurt
4 (6-oz) salmon fillets
salt to taste
Mango Coriander Relish
1 large mango, peeled and diced
3 green onions, finely chopped
1 tbsp grated ginger
1 tsp finely chopped jalapeno pepper
2 tbsp lime juice
2 tbsp chopped fresh mint
Salt to taste
Method
- Combine garlic, ginger, lemon juice, garam masala, oil, yogurt and salt.
- Place salmon in oiled baking dish and brush with marinade. Marinate at room temperature for 1 hour.
- Combine mango, green onions, ginger, jalapeno, lime juice and mint for relish. Season with salt. Refrigerate until needed.
- Preheat oven to 450°F.
- Bake salmon for 10 to 12 minutes or until white juices lust begin to appear.
- Serve salmon with relish on the side.
Makes 4 servings.
