Ingredients

2 tsp chopped garlic
1 tbsp grated ginger
1 tbsp lemon juice
1 tbsp garam masala or curry paste
2 tbsp vegetable oil
1/4 cup yogurt
4 (6-oz) salmon fillets
salt to taste

Mango Coriander Relish

1 large mango, peeled and diced
3 green onions, finely chopped
1 tbsp grated ginger
1 tsp finely chopped jalapeno pepper
2 tbsp lime juice
2 tbsp chopped fresh mint
Salt to taste

Method

  1. Combine garlic, ginger, lemon juice, garam masala, oil, yogurt and salt.
  2. Place salmon in oiled baking dish and brush with marinade. Marinate at room temperature for 1 hour.
  3. Combine mango, green onions, ginger, jalapeno, lime juice and mint for relish. Season with salt. Refrigerate until needed.
  4. Preheat oven to 450°F.
  5. Bake salmon for 10 to 12 minutes or until white juices lust begin to appear.
  6. Serve salmon with relish on the side.

Makes 4 servings.
