This richly balanced carb and protein dish is just pure bliss with roti, puri or rice. It's a classic that is made pretty much every week in my household. Here is the recipe of this simple yet delicious curry.

Ingredients
- Potatoes - 2 (diced into cubes)
- Soya chunks - 1cup
- Onion - 2onions (finely chopped)
- Tomato - 2 (finely chopped)
- Green chillies - 5 (slit)
- Star anise - 2
- Bay leaf - 1 big
- Cinnamon sticks - 1
- Peppercorns - a few
- Cumin seeds - 1-2tsp
- Cardamom pods - 2-3
- Red chilli paste/powder - 1tbsp
- Oil - 3tbsp
- Ginger garlic paste - 2tbsp
- Salt - as per taste
- Red chilli powder - 4tbsp (or as per taste)
- Turmeric powder - 2tsp
- Coriander powder - 2tbsp
- Garam masala powder - 2tbsp
- Curd - 1/2cup
- Water - if and as required
- Coriander and mint leaves - handful
Preparation
- Bring water to boil with a little salt. And add the soya chunks to it and let them cook for about 3minutes until they double in size. Switch off heat and keep aside for 15min it's with lid on. Then drain the excess water off and squeeze the water off the chunks and keep aside
- In a deep pan, heat oil and add the garam masala items and let them sizzle.
- Now add the green chillies and onions and let them cook until golden brown.
- Add salt to he onions to hasten the process.
- Add ginger garlic paste and sauté for a few minutes.
- Now add the tomatoes and all the powders and mix well.
- Cook well until the tomatoes are soft and mushy.
- Add curd to the pan and mix well to form a nice thick gravy. Add any spices and/or red chilli paste now as per taste.
- Now add the potatoes and soya chunks to the pan and mix well. Cook on low heat. And add water and close it with a lid and let it cook for 10minutes, while stirring occasionally.
- Check if the potatoes are cooked or not. In case the potatoes aren't getting cooked easily transfer contents into a pressure cooker and give it pressure for 2-4whistles. It makes the process easier and faster. If not adding enough water and keeping the flame on low can also cook the potatoes but it takes time.
- Now add the coriander and mint leaves and sprinkle some garam masala powder on top and cover the pan with a lid and let it rest for 5-10minutes before serving.
- And voila your Rich and flavoursome Potato meal maker curry is ready.
