Salads in jars are the convenient lunch we all need.

This is what has been missing in my life. If you're a visual person when it comes to eating these will make it easy to grab and go. This southwest-inspired flavor is full of flavor and takes about 25 minutes for four days worth of lunches!

what you'll need

  • 1 cucumber
  • mini tomatoes
  • 1 can of corn
  • 1 can of black beans
  • 1 red onion
  • 6-8 small sweet potatoes
  • blend of 2 parts garlic, 1 part cumin, and 1 part chili powder
  • fave leafy greens

what you'll do

wash all your produce, really scrub them potatoes!

peel then chop the sweet potatoes into small cubes

season them with spice blend and 1 TBSP of oil and air fry at 400 for 15 minutes

while your potatoes are cooking prepare your other ingredients.

chop your cucumber and red onion, drain and rinse the corn and black beans

How to layer

It's important to layer correctly so you don't have a soggy salad.

I didn't put the dressing in the jar because I work from home BUT if you'll be grabbing to go, the dressing should be the first thing in the jar! Cucumbers and tomatoes go first because they have a lot of "juices" that will blend well with the dressing. next up you got your rinsed corn and bean blend, followed by red onion, the southwest sweet potatoes, and finish with your leafy greens!
