I call this my Seven Fruit Two Cup Salad because it has 2 cups of each kind of fruit and 2 cups of juice. Add whatever fruit you have in the house and don't be afraid to use canned fruit, like I did, for even more variety.
Rinse and dice the fresh fruit into bite size pieces.
Drain any canned fruit and reserve the liquid.
Pour the canned juice into a measuring cup.
If there is not enough for 2 cups, add
orange juice to the 2 cup mark.
Pour the juice over the fruit and toss. Refrigerate for four
hours, tossing every hour. This will keep for a few days but
looks best when served in about four hours. I ate mine
for three days and the fruit was still firm and delicious.
