Ingredients
3 tablespoons golden raisins (sultanas)
2 pounds spinach, tough stems removed
2 tablespoons pine nuts
3 tablespoons extra-virgin olive oil
1 medium onion, finely chopped
1 clove garlic, finely chopped
salt and freshly ground black pepper
Method
- Soak the raisins in cold water for 15 minutes. Drain well.
- Cook the spinach in a little lightly salted water until wilted, 5-7 minutes. Drain and chop coarsely.
- Toast the pine nuts in a large frying pan over medium heat until golden, about 5 minutes. Remove from the pan and set aside.
- Add the oil to the same pan. Add the onion and garlic and saute over medium heat until softened, about 5 minutes.
- Add the spinach and raisins. Season with salt and pepper and toss gently. Sprinkle with the pine nuts.
- Serve hot.
