I was at the Manassas Farmers Market, and I decided that I wanted some French toast- simple and easy. Do you know me at all? I want amped- up-full-of flavor-and-texture French toast. So I saw Great Harvest Bread Co. and with their recommendation got the brioche bread. Found a fruit stand for some peaches and made some crunchy-on-the-outside-creamy-on-the-inside French toast (much like polar bears say about igloos). Baked not fried . I hope you like it.

1 loaf brioche bread (I got mine from Great Harvest Bread Co at the Manassas Farmers' Market) cut into 1 x 3 x 1 strips
4 eggs
1 cup whole milk
3 tablespoons sugar
1 teaspoon vanilla
1 teaspoon cinnamon
3 cups corn flakes, crushed but not fine
Sauce:
3 large peaches
3 tablespoons butter
1 cup brown sugar
1 teaspoon cinnamon
1 tablespoon bourbon
1 teaspoon vanilla
2 tablespoons lemon juice

Remove crust and cut brioche into 1 x 3 x 1 inch sticks.

In a pie pan mix milk, eggs, sugar, cinnamon, and vanilla until combined.

In a plastic bag coarsely smash corn flakes.

Line a baking sheet with parchment.

Heat oven to 200.

Place brioche sticks on pan and place in oven for 20 minutes.

Peal peaches and cut in 1/4 inch wedges; add lemon juice to cut peaches and toss.

Heat skillet to medium and add butter and brown sugar and cook until both are melted.

Add peaches, bourbon, and vanilla; cook for 10 minutes and set aside.

Remove bread from oven and let cool for 10 minutes.

Set oven to 350.

Add bread to egg/milk mixture and let sit for 20 minutes turning once half way through.

Dip each piece in corn flakes and press gently to make sure coating sticks.

Place on parchment- lined baking sheet.

Bake for 15 -20 minutes, turning once, until golden brown.

Serve with peaches on the side.
