Are you a mac and cheese lover? This is definitely a recipe to give a try! My better half was not a fan of the tomatoes being in this, so he lucked out when I didn't have a 4 qt. glass baking dish. I split the recipe up, where one had the tomatoes and the other did not. Original recipe is at the end.
This is a great recipe to make on a chilly night - would be a great side for pulled pork (or put on top of the pulled pork!). Green beans would go great with this as a side.
Ingredients:
- 1 package bacon (I used a 1.5 lb of Wright bacon)
- 1 lb beef
- 1 small onion
- 1 tsp. minced garlic
- 1 loaf (32 oz. box) of Velveeta cheese
- 1/4 cup butter (I used unsalted butter)
- 4 cups whole milk
- 1 package (16 oz.) elbow noodles
- 2 cups shredded sharp cheddar cheese (8 oz)
- 2 cups diced fresh tomatoes
- 1 cup bread crumbs
- Garlic powder (optional)
- Bag of fresh spinach (optional)
Directions:
- You will need a 4 quart glass baking dish. We have a 3 quart and a 1 quart glass baking dish, so I used those two for this.
- Preheat oven to 350.
- Cook bacon - I put ours in the oven at 350. If you do it this way, spray a baking sheet and line the bacon on it. You can put the bacon in the oven while it is preheating. Should take about 30-35 minutes.
- Brown the beef with the diced onion and minced garlic. Once done, drain the grease and set aside.
- Cut Velveeta cheese into cubes and place in a microwave bowl with the milk and butter. I also sprinkled some garlic powder into the mix. Heat until it is melted and continue to stir. It may be runny, which is fine - it will thicken up. Add the shredded cheese.
- Boil the elbow noodles - be sure not to overcook. Boil 3 minutes less than what the package states. Once done, drain.
- Cut the tomatoes into bite-sized pieces.
- Combine the browned beef, noodles, tomatoes and cheese together - I used the same pot that I boiled the noodles in.
- Once bacon is done, soak any grease with a paper towel. Once cool enough to cut, dice up the bacon and add to the mac and cheese in the pot.
- Grease the glass bakeware you will be using and pour the beef, bacon, tomato mac & cheese mix into it.
- Bake for 30 minutes covered with foil.
- Take out of oven, remove the foil and sprinkle the bread crumbs on top. Put back in for another 5 minutes.
Now it is time to enjoy!
