I had quite a bit of trouble translating the name of this street food item into English so forgive me if it sounds strange. Essentially, it is a classic breakfast item in Wuhan made by simmering a fish-based soup until it becomes mushy and thick. The soup is then poured onto rice noodles, which are served with toppings such as dried shrimp, scallion, and pickled radish. Of course, one would be wise to order some deep-fried dough sticks on the side to dip into the soup for a supreme explosion of flavour and texture!
