If COVID-19 has done one thing right - it is making us realize the importance of being healthy and fit. Personally, its now been more than a year, and I have only turned into a couch potato ( not that I wasn't one before 😛 ). I wake up, eat and sit with my laptop all day long. My dad on the other hand is a fitness freak, leave it up to him to balance eating junk and still looking fine. Few days ago, he began replacing our regular dinner ( usually a curry with roti/flat bread) with some healthy salads. He made us taste it, I for one didn't want to but it took just a morsel to get me hooked.

Day 1

Ingredients:

  • Soak 1/2 cup of chick peas overnight
  • 1 small Tomato - diced
  • 1 small onion - diced
  • 3 Boiled eggs - roughly chopped
  • Salt according to taste
  • 1/2 tsp Turmeric powder
  • 1/2 tsp Red chili powder
  • 2 green chilies chopped

Take a pan, add a tsp of oil, let it heat for a while before adding turmeric and Red chili powder. Follow this step with the adding of veggies. sauté it for a minute and then add in your 3 chopped eggs. You just have to sauté it for another 1-2 minutes and voila! Garnish it with mint leaves.

Day 2

Ingredients-
We used a darker variety of chick peas for this, We repeat the same veggies as before with a tiny addition of a few more-

  • Broccoli - diced
  • A small carrot - minced
  • Bell pepper - minced

The same easy process has to be repeated again and you are good to go!

Day 3

You might be wondering what is different about the day 3 salad. Honestly its the same process and the same veggies. We just replaced the chick peas with Sago.

In fact. these salads can have as many healthy veggies as you want to add in. The process is very easy and for those peeps, who can't cook or find it tiring, THIS IS THE RECIPE FOR YOU!

Suggestions-
Veggies mostly remain the same, if you want to add more or replace any, you can go for Bok choy, Kale, Lettuce and red cabbage. You can use chickpeas, kidney beans, soya beans, peanuts, sago or even Paneer!
