A big stumbling block for many people new to Indian cooking is not knowing how to begin.
To make it easy for you, we begin with lesson #1 on spices and herbs.
Spices are Fundamental to Indian Cooking
Did you know that spices are herbs are the backbone of Indian food?
We even add spices in our sweets!
Apart from adding a great aroma and flavor to the dish, these spices and herbs aid in digestion and have some more medicinal benefits as well.
What are the Most Important Spices?
Here are the most important spices, herbs and blends that are added in most Indian recipes.
With just these basic spices and blends you can rustle up any Indian dish and it will be good.
- turmeric powder (ground dried turmeric roots)
- red chilli powder (ground dried red chili pepper)
- garam masala powder (not curry powder). Get the recipe here.
- coriander powder (ground coriander). Do it yourself.
- cumin seeds or cumin powder (ground cumin)
- coriander leaves (cilantro)
- ginger & garlic - chopped, crushed or minced. Check out our recipe.
- chillies (chili pepper)
- whole spices like cardamom, cinnamon, cloves, black pepper and many more

Next Step: Get These Important Spices
So...now that you know the most important spices in Indian cooking, make your list and buy these at the store… or better yet...make them yourself! These will be used in all our recipes in this course.
Individual spices can be easily ground in a spice grinder or a small grinder. You can sun dry or lightly toast them and then grind. Store in an airtight jar. This way you can make ground powdered spices like - ground coriander, ground cumin, ground fennel seeds etc.
